Skin-contact Viognier. Handpicked from a tiny organically farmed plot in Macclesfield, based in the Adelaide Hills. Destemmed into open top fermenters, foot trodden & gently hand plunged. Wild fermented on skins until dry, the fruit was then transferred to stainless steel where the wine remained on skins for a total of 99 days before it was pressed & returned to mature. Bottled unfined & unfiltered. Peaches, grapefruits and saline, textural goodness- Grafted Wines.
