Pinot Noir (93%) from Piccadilly Valley planted in 1998. Old vine grenache cert. organic from Onkaparinga Hills. Whole bunches crushed and left on skins for 4-8 hours before pressing to a mix of tank and seasoned French oak. Indigenous ferment, unfined, and filtered to retain natural malic acid.
