Introducing BEAST wines, a collaboration between Samuel J Smith of VHS and Adelaide artist, Lucas Croall. This is the 7th wine in the series of 18 in total.
Beast 008 is a combination of two separate ferments. The first is the Cinsault, 6 days on skins, Pigeage (foot pressing) twice daily. The second ferment was 1 month on skins with Pigeage 3 times a day for the first 8 days before being locked down. Pressed directly to a single puncheon for 6 months elevage before bottling. Serve chilled.
